Yummy Crock-Pot Stew
Ingredients
2-3lbs pork
1c. prunes
1c. ?roasted red peppers
1/4c. capers
1/2 c. olives, whatever you have
1/2 c. red wine
1/3 c. balsamic vinegar
1/3 c. brown sugar
4 c. beef stock
oregano
basil
4 cloves garlic
Method:
Cut the pork into cubes and brown.
Throw everything into the Crock-Pot and cook on highest setting for about 6 hrs (an afternoon).
Let cool and stick in fridge overnite.
Skim off fat.
Reheat in Crock-Pot.
Enjoy!!
